Roasted Lemon & Herb Chicken Recipe

Cook up a storm with this simple and delicious #BaysideButchery Roast Lemon and Herb Chicken!

This dish packs a punch with all the flavour of our top quality chicken.

You will need:

🍗 Bayside Butchery Chicken pieces
🍗 Salt and black pepper to taste
🍗 1 lemon, halved
🍗 4 cloves garlic, minced
🍗 2 tbsp olive oil
🍗 1 tsp dried thyme
🍗 1 tsp dried rosemary
🍗 1 tsp paprika
🍗 Fresh herbs rosemary and thyme for garnish

Method:

  1. Preheat your oven to 220°C
  2. Pat the chicken pieces dry with paper towels. Season the chicken generously with salt and black pepper.
  3. Place the lemon halves and minced garlic in between the chicken pieces. This adds a burst of citrus flavour and aromatic garlic.
  4. In a small bowl, mix olive oil, dried thyme, dried rosemary, and paprika. Rub this mixture all over the chicken, ensuring it's evenly coated.
  5. Place the chicken on a roasting pan or oven-safe skillet. Make sure there is enough space for each piece to lay flat on the pan. This helps the chicken cook evenly.
  6. Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 74°C.
  7. Remove the chicken from the oven and let it rest for 10-15 minutes. This allows the juices to redistribute.
  8. Garnish with fresh herbs.

Serve with your favourite side dishes.
