
Roasted Lemon & Herb Chicken Recipe

This dish packs a punch with all the flavour of our top quality chicken.
You will need:
Bayside Butchery Chicken pieces
Salt and black pepper to taste
1 lemon, halved
4 cloves garlic, minced
2 tbsp olive oil
1 tsp dried thyme
1 tsp dried rosemary
1 tsp paprika
Fresh herbs rosemary and thyme for garnish
Method:
- Preheat your oven to 220°C
- Pat the chicken pieces dry with paper towels. Season the chicken generously with salt and black pepper.
- Place the lemon halves and minced garlic in between the chicken pieces. This adds a burst of citrus flavour and aromatic garlic.
- In a small bowl, mix olive oil, dried thyme, dried rosemary, and paprika. Rub this mixture all over the chicken, ensuring it's evenly coated.
- Place the chicken on a roasting pan or oven-safe skillet. Make sure there is enough space for each piece to lay flat on the pan. This helps the chicken cook evenly.
- Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 74°C.
- Remove the chicken from the oven and let it rest for 10-15 minutes. This allows the juices to redistribute.
- Garnish with fresh herbs.
Serve with your favourite side dishes.
