Lemon & Herb Lamb Kebabs

Enjoy #BaysideButchery tender and flavourful lamb in these lamb kebabs marinated in a zesty lemon and herb mixture, perfect for grilling or broiling. They’re the perfect addition to any meal!

Ingredients:

  • 500g Bayside Butchery Lamb Cubes
  • Juice and zest of 2 lemons
  • 3 cloves garlic, minced
  • 2 Tbsp fresh rosemary, chopped
  • 2 Tbsp fresh thyme, chopped
  • 3 Tbsp olive oil
  • Salt and freshly ground black pepper to taste
  • Wooden or metal skewers

Method:

  1. In a large bowl, combine the lemon juice, lemon zest, minced garlic, chopped rosemary, chopped thyme, olive oil, salt, and pepper. Mix well.
  2. Add the lamb cubes to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 2 hours, or overnight for enhanced flavor.
  3. If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread the marinated lamb cubes onto the skewers, leaving a small gap between each piece for even cooking.
  4. Preheat your grill or broiler to medium-high heat. Cook the kebabs for 8-10 minutes, turning occasionally, until the lamb is cooked to your desired level of doneness.
  5. Allow the kebabs to rest for a few minutes before serving to let the juices redistribute.
