Ingredients:
- 500g Bayside Butchery Lamb Cubes
- Juice and zest of 2 lemons
- 3 cloves garlic, minced
- 2 Tbsp fresh rosemary, chopped
- 2 Tbsp fresh thyme, chopped
- 3 Tbsp olive oil
- Salt and freshly ground black pepper to taste
- Wooden or metal skewers
Method:
- In a large bowl, combine the lemon juice, lemon zest, minced garlic, chopped rosemary, chopped thyme, olive oil, salt, and pepper. Mix well.
- Add the lamb cubes to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 2 hours, or overnight for enhanced flavor.
- If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread the marinated lamb cubes onto the skewers, leaving a small gap between each piece for even cooking.
- Preheat your grill or broiler to medium-high heat. Cook the kebabs for 8-10 minutes, turning occasionally, until the lamb is cooked to your desired level of doneness.
- Allow the kebabs to rest for a few minutes before serving to let the juices redistribute.
