Beef Curry

Ingredients:

  • 500g #BaysideButchery Beef, cubed
  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tomatoes, chopped
  • 2 tbsp tomato paste
  • 1 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric powder
  • 1/4 tsp cayenne pepper (adjust to taste)
  • Salt to taste
  • 1 cup beef or vegetable broth
  • 1 cup coconut milk
  • Fresh coriander leaves for garnish (optional)

Method:

  1. Heat the vegetable oil in a large pot or Dutch oven over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes.
  2. Add the minced garlic and grated ginger to the pot, and cook for another 1-2 minutes until fragrant.
  3. Add the cubed beef to the pot and cook until browned on all sides, about 5-7 minutes.
  4. Stir in the chopped tomatoes, tomato paste, curry powder, ground cumin, ground coriander, turmeric powder, cayenne pepper, and salt. Cook for 2-3 minutes, stirring constantly to toast the spices.
  5. Pour in the beef or vegetable broth and coconut milk, stirring to combine. Bring the mixture to a simmer.
  6. Reduce the heat to low, cover the pot, and let the curry simmer gently for 1.5 to 2 hours, stirring occasionally, until the beef is tender and the flavours have melded together.
  7. Taste and adjust the seasoning if needed. If the curry is too thick, you can add a little more broth or water to reach your desired consistency.

Serve the beef curry hot over cooked rice or with naan bread and let this dish be the star of the show!
