Ingredients:

  • Beef Fillet Medallions

  • 2 tbsp olive oil

  • 2 tbsp unsalted butter

  • 1 garlic clove, minced

  • 1 sprig fresh rosemary or thyme

  • Salt and freshly ground black pepper (to taste)

For the Red Wine Sauce:

  • 1 cup dry red wine

  • 1 cup beef stock

  • 1 tbsp balsamic vinegar

  • 1 tbsp unsalted butter

  • 1 tsp sugar

Method:

  2. Add beef stock, balsamic vinegar, and sugar, then simmer until the sauce reduces by half and thickens slightly.

  3. Finish by whisking in butter for a silky, glossy sauce.
